Method

Meatballs

  1. 1

    Prepare the Meatball Mixture

In a large mixing bowl, combine ground beef, breadcrumbs, egg, minced garlic, chopped parsley, salt, and black pepper. Mix well using your hands or a spoon until all ingredients are fully incorporated.

  2. 2

    Shape the Meatballs

Take a small amount of the mixture and roll it between your palms to form meatballs about the size of a golf ball. Place them on a plate or tray.

  3. 3

    Cook the Meatballs

In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the meatballs in batches and cook for about 4-5 minutes per side until browned and cooked through. Remove and set aside.

Marinara Sauce

  1. 4

    Sauté the Aromatics

In the same skillet used for the meatballs, add olive oil and heat over medium heat. Add chopped onion and cook until translucent, about 5 minutes. Then, add minced garlic and cook for an additional minute.

  2. 5

    Add the Tomatoes

Pour in the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Stir to combine and let the sauce simmer for about 15 minutes, stirring occasionally.

  3. 6

    Combine with Meatballs

Add the cooked meatballs to the marinara sauce and let them simmer together for an additional 10 minutes, allowing the flavors to meld.

Rice

  1. 7

    Cook the Rice

In a medium saucepan, bring water to a boil. Add rice and salt, reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is fluffy and water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Hummus

  1. 8

    Blend the Ingredients

In a food processor, combine drained chickpeas, tahini, minced garlic, olive oil, lemon juice, salt, and water. Blend until smooth and creamy, adding more water if needed for desired consistency.

  2. 9

    Serve the Hummus

Transfer the hummus to a serving bowl and drizzle with additional olive oil if desired.

Mini Greek Salad

  1. 10

    Prepare the Salad

In a large bowl, combine diced cucumber, diced tomato, thinly sliced red onion, Kalamata olives, and crumbled feta cheese.

  2. 11

    Dress the Salad

Drizzle the salad with olive oil and red wine vinegar. Season with salt and black pepper. Toss gently to combine.
