Meatballs

Preheat Oven
Preheat your oven to 200°C (400°F).

Mix Meatball Ingredients
In a large bowl, combine the ground beef, bread crumbs, egg, minced garlic, chopped parsley, salt, and black pepper. Mix until well combined.

Form Meatballs
Form the mixture into small balls, about 2.5 cm (1 inch) in diameter.

Bake Meatballs
Place the meatballs on a baking tray lined with parchment paper and bake for 20-25 minutes until cooked through.
Marinara Sauce

Sauté Onion
Add the chopped onion and cook until translucent, about 5 minutes.

Add Garlic
Stir in the minced garlic and cook for an additional minute until fragrant.

Add Tomatoes and Seasonings
Add the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Stir to combine.

Simmer Sauce
Bring the sauce to a simmer and let it cook for 15-20 minutes.
Rice

Combine Rice Ingredients
In a medium saucepan, combine the uncooked rice, water, and salt.

Cook Rice
Bring to a boil over medium-high heat, then reduce heat to low, cover, and let simmer for 15-20 minutes until the rice is tender and water is absorbed.
Hummus

Blend Hummus
Blend until smooth, adding additional water if necessary to achieve desired consistency.
Mini Greek Salad

Combine Salad Ingredients
In a large bowl, combine the diced cucumber, halved cherry tomatoes, thinly sliced red onion, pitted kalamata olives, and crumbled feta cheese.

Dress Salad
Drizzle with olive oil and red wine vinegar, then season with salt and black pepper. Toss gently to combine.
