Prepare the cheese filling
In a medium bowl, crumble the feta cheese and shred the mozzarella cheese. Add the chopped parsley, salt, and black pepper. Mix until well combined.

Assemble the cheese rolls
Preheat your oven to 180°C (350°F). Lay one sheet of phyllo pastry on a clean surface and brush it lightly with melted butter. Place another sheet on top and brush it again. Spoon a portion of the cheese filling (about 2 tablespoons) at one end of the pastry sheet. Fold the sides over the filling and carefully roll it up tightly to form a log. Repeat with the remaining phyllo sheets and filling.

Bake the cheese rolls
Place the assembled cheese rolls on a baking sheet lined with parchment paper. Brush the tops with any remaining melted butter. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.

Serve the cheese rolls
Remove the cheese rolls from the oven and let them cool slightly. Serve warm with the prepared tomato sauce drizzled over or on the side for dipping.
