Preparation of Grains

    Cook the Bulgur Wheat

    In a medium saucepan, bring 2 cups of water to a boil. Add the bulgur wheat and a pinch of salt. Stir, cover, and remove from heat. Allow it to sit for about 15 minutes or until the water is absorbed and the bulgur is tender. Fluff with a fork.

Preparation of Vegetables

    Prepare the Vegetables

    While the bulgur is cooking, wash and prepare the vegetables. Dice the tomato, cucumber, and bell pepper. Finely chop the red onion. Set aside.

    Shred the Kale

    Remove the stems from the kale leaves and shred the leaves into bite-sized pieces. Rinse and dry them thoroughly.

Vinaigrette Preparation

    Make the Lemon Mint Vinaigrette

    In a small bowl, whisk together the lemon juice, olive oil, chopped mint, sumac, salt, and black pepper until well combined. Adjust seasoning to taste.

Assembly

    Combine the Ingredients

    In a large mixing bowl, combine the fluffed bulgur wheat, shredded kale, diced tomato, cucumber, red onion, and bell pepper. Drizzle the lemon mint vinaigrette over the salad.
