Prepare the Rice

Cook Basmati Rice
Rinse 1 cup of basmati rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

In a large serving bowl, layer the cooked basmati rice first. Top it with the chopped vegetables and olives. Crumble the feta cheese over the top and drizzle with shug to taste.
Warm Pita Bread

Heat Pita Bread
Warm the pita bread by placing it in a dry skillet over medium heat for about 1-2 minutes on each side until soft and pliable. Alternatively, you can wrap them in foil and heat them in a preheated oven at 350°F (175°C) for about 5 minutes.
