Method
Gyro Meat Preparation
- 1
Prepare the Gyro Meat
In a mixing bowl, combine ground lamb or beef, minced garlic, dried oregano, ground cumin, salt, black pepper, and olive oil. Mix until well combined.
- 2
Shape the Meat
Form the mixture into a loaf shape and place it on a baking sheet lined with parchment paper.
- 3
Cook the Meat
Preheat your oven to 375°F (190°C) and bake the meat for about 25-30 minutes or until cooked through. Let it cool slightly, then slice thinly.
Yellow Rice Preparation
- 4
Rinse the Rice
In a fine mesh strainer, rinse the long-grain rice under cold water until the water runs clear.
- 5
Cook the Rice
In a medium saucepan, combine rinsed rice, chicken broth, turmeric, salt, and olive oil. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed.
- 6
Fluff the Rice
Remove from heat and let sit for 5 minutes, then fluff with a fork.
Mini Greek Salad Preparation
- 7
Prepare the Salad Ingredients
In a large bowl, combine diced cucumber, diced tomatoes, thinly sliced red onion, Kalamata olives, and crumbled feta cheese.
- 8
Dress the Salad
In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper. Drizzle over the salad and toss gently to combine.
Hummus and Pita Preparation
- 9
Serve the Hummus
Place the hummus in a serving bowl. Arrange pita wedges around the hummus for dipping.
