Preparation of Fries

Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, approximately 1/4 inch thick.

Dry the Potatoes
Drain the water and pat the potato strips dry with a clean kitchen towel to remove moisture.
Frying the Fries

Heat the Oil
In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in small batches. Fry until golden brown and crispy, about 5-7 minutes.

Drain Excess Oil
Using a slotted spoon, remove the fries from the oil and place them on paper towels to drain excess oil. Season with salt immediately.

In a large bowl, combine the hot fries with the chopped parsley, dried oregano, grated Parmesan cheese, and black pepper. Toss gently to ensure even coating.
