Preparing the Marinara Sauce

Make the Sauce
Add the crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir well and bring to a simmer. Let it simmer for 15-20 minutes, stirring occasionally.

Finish the Sauce
Once the sauce has thickened, stir in the fresh basil. Remove from heat and set aside.
Frying the Calamari

Prepare the Calamari
Clean the calamari by removing the insides and the skin. Cut the calamari into rings about 1/2 inch thick.

Set Up Breading Station
In one bowl, mix together the flour, cornstarch, salt, black pepper, and paprika. In a second bowl, beat the eggs. In a third bowl, place the breadcrumbs.

Bread the Calamari
Dip each calamari ring first into the flour mixture, then into the beaten eggs, and finally coat with breadcrumbs. Set aside on a plate.

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until they are golden brown and crispy.

Drain and Serve
Remove the fried calamari with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve hot with the marinara sauce.
