Falafel Preparation

Prepare the Mixture
In a food processor, combine the canned chickpeas (drained), parsley, cilantro, garlic, cumin, coriander, baking powder, salt, black pepper, and flour. Pulse until the mixture is coarsely blended but not pureed.

Form the Falafel
Scoop out the mixture and form small balls or patties with your hands (about the size of a golf ball). Place them on a plate.

Fry the Falafel
In a deep frying pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the falafel balls in batches, frying until golden brown, about 3-4 minutes on each side. Drain on paper towels.

Cook the Rice
In a medium saucepan, bring the vegetable broth to a boil. Add the rice, turmeric, and salt. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and liquid is absorbed. Fluff with a fork before serving.

Prepare the Salad
In a bowl, combine the diced cucumber, tomatoes, red onion, and Kalamata olives. In a separate small bowl, whisk together the olive oil, red wine vinegar, and oregano. Pour the dressing over the salad and toss gently.

Add Feta
Sprinkle the crumbled feta cheese over the top of the salad before serving.
Hummus Preparation

Blend the Hummus
In a food processor, combine the canned chickpeas (drained), tahini, minced garlic, lemon juice, olive oil, salt, and water. Blend until smooth. Adjust consistency with more water if necessary.
Pita Preparation

Warm the Pita
Warm the pita bread in the oven or on a skillet for a few minutes until soft and pliable.
