Prepare the Vegetables
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onion and cook until caramelized, about 10-15 minutes. Add the sliced bell peppers and cook for an additional 5-7 minutes until tender. Season with salt and pepper, then drizzle with balsamic vinegar. Set aside.

Cook the Steak
Season the hanger steak with salt and black pepper. In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes.

Assemble the Sandwiches
Thinly slice the cooked hanger steak against the grain. Place the sliced steak on a sub roll, top with caramelized onions, grilled bell peppers, and provolone cheese. Optionally, you can place the assembled sandwiches under a broiler for 1-2 minutes to melt the cheese.
