Preparation Instructions

  1. 1

    Cook the Bacon

In a skillet over medium heat, cook the bacon strips until crispy. Remove and drain on paper towels.

  2. 2

    Prepare the Salmon

Rub the salmon fillets with olive oil and Cajun seasoning. In the same skillet used for the bacon, sear the salmon over medium-high heat for about 4-5 minutes on each side, or until cooked through and blackened. Remove from heat and let rest.

  3. 3

    Prepare the Salad

In a large bowl, combine the mixed salad greens, halved cherry tomatoes, diced avocado, and sliced scallions.

  4. 4

    Prepare the Eggs

Peel and chop the hard-boiled eggs, and add them to the salad mix.

  5. 5

    Assemble the Salad

Crumble the cooked bacon over the salad. Top with the blackened salmon fillets. Drizzle with your choice of creamy herb dressing.
