Prepare the oysters

Rinse the farm-raised oysters under cold water and pat them dry with paper towels.

Make the batter

In a bowl, combine all-purpose flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper. Mix well. Dip the oysters into the buttermilk, then dredge them in the flour mixture until fully coated.

Fry the oysters

Heat vegetable oil in a deep skillet over medium-high heat. Once hot, carefully add the battered oysters in batches and fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Assemble the Po'Boy

Slice the hoggie rolls lengthwise without cutting all the way through. Spread remoulade sauce inside the rolls, then layer with fried oysters, lettuce, tomato slices, and pickles.

Serve

Serve the Oyster Po'Boy immediately while hot and crispy.
