Prepare the Salmon
Preheat your oven to 375°F (190°C). Coat the salmon fillets with olive oil and rub the Cajun spice mix evenly over both sides.
Bake the Salmon
Place the seasoned salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
Make the Pico de Gallo
In a bowl, combine diced tomatoes, red onion, cilantro, and lime juice. Mix well and season with salt and pepper to taste. Set aside.
Prepare the Mashed Potatoes
If using homemade mashed potatoes, prepare them according to your recipe. If using pre-made, heat them as per the package instructions.
Grill the Asparagus
While the salmon is baking, grill the asparagus on medium heat for about 5-7 minutes until tender. Season with salt and pepper.
Serve
Once the salmon is done, place it on a plate, top with pico de gallo, and serve alongside the mashed potatoes and grilled asparagus.
