Prepare the Coleslaw

Shred the cabbage and carrot. In a bowl, combine the mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well and add the shredded vegetables. Toss to coat and set aside in the refrigerator.

Prepare the Potatoes

Peel the potatoes and cut them into thick fries. Soak them in cold water for 30 minutes. Drain and pat dry.

Make the Batter

In a bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, and cold sparkling water until smooth.

Fry the Potatoes

In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

Fry the Cod

Dip each cod fillet into the batter, allowing excess to drip off. Carefully place in the hot oil and fry until golden brown and cooked through, about 5-6 minutes. Remove and drain on paper towels.

Serve

Serve the fried cod fillets with hand-cut fries and coleslaw on the side.
