Method
Homemade Italian Sausage
Prepare the Sausage Mixture
In a large bowl, combine the ground pork, fennel seeds, paprika, garlic powder, black pepper, salt, red pepper flakes, parsley, and white wine. Mix well until all ingredients are fully incorporated.
Shape the Sausage
Using your hands, form the mixture into small sausage patties or links, about 2 inches in diameter. Set aside.
Cook the Sausage
In a skillet over medium heat, cook the sausage patties or links for about 4-5 minutes on each side, or until they are browned and cooked through. Remove from heat and set aside.
Spiced Capicola Ham
Prepare the Capicola
Slice the capicola ham into thin strips. In a small bowl, mix the black pepper and cayenne pepper. Sprinkle the spice mixture over the ham slices to add flavor.
Pepperoni
Prepare the Pepperoni
Cut pepperoni slices into halves or quarters if desired, or use them as is.
Combine and Serve
Assemble the Dish
On a serving platter, layer the cooked Italian sausage, spiced capicola ham, and pepperoni slices. Top with the spicy cherry peppers for added heat and flavor.
Serve
Serve immediately while warm as a delicious appetizer or main dish.
