Preparation of Eggplant

    Slice the Eggplant

    Wash the eggplant and slice it into 1/4 inch thick rounds. If the eggplant is particularly bitter, you can sprinkle the slices with salt and let them sit for 30 minutes. Rinse and pat dry.

    Sterilize glass jars by boiling them in water for 10 minutes or running them through the dishwasher. Let them cool before filling.

Making the Pickling Brine

    In a medium saucepan, combine 2 cups of water, 1 cup of white vinegar, 2 tablespoons of salt, and 1 tablespoon of sugar. Stir well.

    Add the whole garlic cloves, red pepper flakes, black peppercorns, and bay leaves to the saucepan. Bring the mixture to a boil over medium heat, stirring occasionally.

Pickling Process
