Prepare the Ingredients
Begin by preheating your oven to 375°F (190°C). Slice the ciabatta bread in half and set aside.
Sauté the Mushrooms
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced mushrooms, salt, and pepper. Sauté until the mushrooms are golden brown, about 5-7 minutes.
Assemble the Sandwich
On the bottom half of the ciabatta, layer roasted red peppers, sautéed mushrooms, sliced green olives, crumbled feta cheese, and fresh basil leaves.
Add Ricotta
Spread the ricotta cheese evenly on the top half of the ciabatta.
Toast the Sandwich
Drizzle the remaining tablespoon of olive oil on the outside of the ciabatta. Place the assembled sandwich on a baking sheet and toast in the preheated oven for about 10-12 minutes or until the bread is crispy and golden.
Serve
Remove from the oven, slice the sandwich, and serve warm.
