Prepare the Crab Cake Mixture

In a large bowl, combine the jumbo lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, bread crumbs, egg, salt, and black pepper. Gently mix until just combined.

Form Crab Cakes

Divide the mixture into two equal portions and form each into a patty. Place the patties on a plate and refrigerate for at least 30 minutes to firm up.

Fry the Crab Cakes

In a large skillet, heat vegetable oil over medium heat. Once hot, carefully add the crab cakes and cook for about 4-5 minutes on each side, or until golden brown. Remove and drain on paper towels.

Prepare Fried Green Tomatoes

In another skillet, fry the green tomato slices until golden brown on both sides. Remove and drain on paper towels.

Assemble the Sandwich

On each burger bun, spread a layer of tartar sauce. Place a lettuce leaf, followed by a crab cake, a slice of fried green tomato, and a slice of fresh tomato. Top with the other half of the bun.

Serve the crab cake sandwiches hot with additional tartar sauce on the side.
