Prepare the Brussel Sprouts
Trim the stem ends of the Brussel sprouts and remove any yellow leaves. Cut them in half lengthwise.

Cook the Bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and crumble it into small pieces. Leave the bacon grease in the skillet.

Sauté the Brussel Sprouts
In the same skillet with the bacon grease, add the halved Brussel sprouts. Cook for about 5-7 minutes, stirring occasionally until they are browned and tender.

Make the Shallot Vinaigrette
In a small bowl, whisk together the olive oil, honey, apple cider vinegar, minced shallots, salt, and black pepper.

Combine and Serve
Once the Brussel sprouts are cooked, add the crumbled bacon and drizzle the shallot vinaigrette over them. Toss to combine. Top with shaved parmesan cheese and serve immediately.
