Taco Filling

Method

Taco Filling

  1. 1

    Prepare the Marinade

In a bowl, combine olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper. Mix well to create the marinade.

  2. 2

    Marinate the Steak

Place the flank steak in a shallow dish and pour the marinade over it. Ensure the steak is well coated. Cover and refrigerate for at least 30 minutes to 2 hours.

  3. 3

    Cook the Steak

Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and cook for 5-7 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.

  4. 4

    Warm the Tortillas

In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

  5. 5

    Assemble the Tacos

Slice the cooked steak thinly and place it on the warmed tortillas. Top with cilantro and any additional toppings of choice.

Rice and Beans

  1. 6

    Prepare the Rice

In a saucepan, combine the white rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.

  2. 7

    Sauté the Aromatics

In a separate skillet, heat a teaspoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened, about 3-4 minutes.

  3. 8

    Add the Beans

Drain and rinse the canned black beans. Add them to the skillet with the sautéed onion and garlic. Stir in salt and black pepper, and cook for another 5 minutes until heated through.

  4. 9

    Combine and Serve

Once the rice is cooked, fluff it with a fork and stir in chopped cilantro. Serve the rice alongside the black beans and tacos.
