Method

Grilled Chicken

  1. 1

    Prepare the Marinade

In a bowl, mix the olive oil, garlic powder, paprika, cumin, salt, black pepper, and lime juice to create a marinade.

  2. 2

    Marinate the Chicken

Place the chicken breasts in a zip-lock bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes.

  3. 3

    Grill the Chicken

Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side, or until fully cooked.

Cantina Salsa

  1. 4

    Prepare the Ingredients

Dice the tomatoes, red onion, and jalapeño. Chop the cilantro finely.

  2. 5

    Mix the Salsa

In a bowl, combine the diced tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and let it sit for at least 10 minutes for the flavors to meld.

Grilled Corn

  1. 6

    Prepare the Corn

Remove the husks and silk from the corn on the cob.

  2. 7

    Grill the Corn

Place the corn directly on the grill and cook for about 10 minutes, turning occasionally until charred.

  3. 8

    Season the Corn

Melt the butter and mix in chili powder and salt. Brush the mixture over the grilled corn before serving.

Tortilla Chips

  1. 9

    Cut the Tortillas

Stack the corn tortillas and cut them into wedges.

  2. 10

    Fry the Chips

Heat oil in a deep pan over medium-high heat. Fry the tortilla wedges in batches until golden brown and crispy, about 2-3 minutes.

  3. 11

    Drain and Season

Remove the chips from the oil and drain on paper towels. Sprinkle with salt while they are still warm.
