Prepare the Filling

Cook the Meat
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent (about 3-4 minutes). Add the ground beef, shredded chicken, or shredded beef, and cook until browned and cooked through (about 7-10 minutes). Drain any excess fat.

Season the Filling
Add salt, black pepper, ground cumin, and garlic powder to the meat mixture. Stir well to combine and cook for an additional 2-3 minutes. Remove from heat and set aside.
Assemble the Enchiladas

Prepare Tortillas
Preheat the oven to 350°F (175°C). In a separate pan, warm the corn tortillas over medium heat for about 30 seconds on each side to make them pliable.

Fill the Tortillas
Spread a small amount of enchilada sauce on the bottom of a baking dish. Take one tortilla, add 2-3 tablespoons of the meat mixture and a sprinkle of shredded cheese, then roll it up tightly and place it seam-side down in the baking dish. Repeat with remaining tortillas.
Bake the Enchiladas

Add Sauce and Cheese
Once all tortillas are filled and placed in the baking dish, pour the remaining enchilada sauce evenly over the top. Sprinkle the rest of the shredded cheese on top.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

Garnish and Serve
Remove the enchiladas from the oven and let them cool for a few minutes. Top with sour cream, chopped cilantro, and sliced jalapeños before serving.
