Tequila Lime Chicken Recipe
Smothered in chipotle ranch dressing, lime juice and mixed Monterey jack and cheddar cheeses then topped with pico de gallo and tortilla strips. Served with rice and beans.

Marinate the Chicken
In a bowl, combine tequila, lime juice, salt, and black pepper. Add chicken breasts and marinate for at least 1 hour in the refrigerator.

Add Toppings
In the last few minutes of cooking, spread chipotle ranch dressing over each chicken breast. Sprinkle with equal parts Monterey Jack and cheddar cheese. Allow cheese to melt.

Serve with Pico de Gallo
Once cooked, remove chicken from heat, top with pico de gallo and tortilla strips before serving.
For the Rice and Beans

Prepare the Rice
In a pot, bring 4 cups of water to a boil. Add rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 20 minutes or until rice is fluffy and water is absorbed.

Heat the Beans
In a separate pot, heat the black beans over medium heat until warmed through. If desired, add a splash of lime juice for flavor.

Garnish and Serve
Once the rice is cooked, fluff it with a fork and mix in chopped cilantro. Serve the chicken alongside rice and beans, garnished with lime wedges.
