Burrito Filling

Method

Preparing the Filling

  1. 1

    Cook the Onion

In a medium skillet over medium heat, add the chopped onion and sauté until translucent, about 3-4 minutes.

  2. 2

    Combine Filling Ingredients

Add refried beans, cooked rice, ground cumin, salt, and black pepper into the skillet with the onions. Stir to combine and cook for an additional 5 minutes until heated through.

Assembling the Burrito

  1. 3

    Warm the Tortillas

Warm the flour tortillas in a dry skillet or microwave to make them pliable, about 30 seconds on each side.

  2. 4

    Fill the Tortillas

Place half of the bean and rice mixture in the center of each tortilla. Top with shredded Monterey Jack and cheddar cheese.

  3. 5

    Roll the Burritos

Fold the sides of the tortilla over the filling, then roll from the bottom up to form a burrito. Ensure the filling is tucked inside.

Cooking the Burrito

  1. 6

    Melt the Cheese

In a clean skillet over medium heat, place the rolled burritos seam-side down. Cook for about 2-3 minutes on each side until golden and the cheese is melted.

  2. 7

    Serve

Remove from the skillet, slice in half if desired, and serve immediately.
