    Prepare the Meat

    Cut the pork shoulder and pork belly into bite-sized cubes. Season with salt and black pepper.

    Chop the Vegetables

    Dice the onion, chop the garlic, and finely chop the bell peppers, tomatoes, and jalapeños.

Cooking

    Sear the Meat

    In a large pot, heat the olive oil over medium-high heat. Add the pork cubes and sear until browned on all sides, about 8-10 minutes. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add the onions and garlic. Sauté until translucent, about 5 minutes. Then add the bell peppers and jalapeños, cooking for another 3-4 minutes.

    Add Tomatoes and Spices

    Stir in the chopped tomatoes, chili powder, cumin, and smoked paprika. Cook for 5 minutes until the tomatoes break down slightly.

    Combine with Broth

    Return the seared pork to the pot and pour in the chicken broth. Bring to a simmer, then reduce heat to low.

    Simmer

    Cover and let simmer for about 1.5 to 2 hours, stirring occasionally, until the pork is tender and the flavors meld.

Serving

    Garnish and Serve

    Ladle the pork chile into bowls, garnish with fresh cilantro, and serve with lime wedges on the side.
