Enchiladas

Method

Prepare the Enchiladas

    Sauté the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion is translucent.

    Add Seasoning

    Stir in ground cumin, salt, and black pepper, cooking for an additional minute until fragrant.

    Combine Rice and Cheese

    Remove from heat and stir in cooked rice and 1 cup of shredded cheese, mixing well to combine.

    Roll the Enchiladas

    Warm the corn tortillas slightly to make them pliable. Place about 1/4 cup of the rice and cheese mixture in each tortilla, roll them up, and place seam-side down in a greased baking dish.

Make the Chili Sauce

    Cook the Sauce

    In a saucepan, heat olive oil over medium heat. Add finely chopped onion and minced garlic, sautéing until soft.

    Add Chili Powder

    Stir in the New Mexico red chili powder, cooking for about 30 seconds to release flavors.

    Combine Ingredients

    Add vegetable broth, tomato sauce, salt, and pepper. Bring to a simmer and let cook for 10-15 minutes until slightly thickened.

Assemble and Bake

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Pour the Sauce

    Pour the chili sauce evenly over the enchiladas in the baking dish.

    Add Cheese

    Sprinkle the remaining cup of shredded cheese over the top of the enchiladas.

    Bake

    Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is melted and bubbly.
