Burrito Filling

    Prepare the Vegetables

    Dice the onion and red bell pepper into small pieces. Mince the garlic cloves.

    Cook the Filling

    In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until softened. Add the minced garlic and diced red bell pepper, cooking for another 2 minutes.

    Add Beans and Seasoning

    Stir in the black beans and corn. Sprinkle in cumin, chili powder, salt, and black pepper. Mix well and let it cook for about 5 minutes, stirring occasionally.

    Mash the Beans

    Using a fork or a potato masher, lightly mash some of the black beans to create a thicker filling, while leaving some whole for texture.

Burrito Assembly

    Prepare the Tortillas

    Warm the flour tortillas in a microwave or on a skillet for a few seconds until pliable.

    Assemble the Burritos

    Place a tortilla on a flat surface. Add about 1/2 cup of the bean filling in the center of the tortilla. Top with shredded cheese, chopped cilantro, sour cream, and slices of avocado.

    Wrap the Burrito

    Fold the sides of the tortilla over the filling, then roll from the bottom up to enclose the filling completely. Repeat with the remaining tortillas and filling.

    Serve

    Place the burritos seam-side down in a serving dish. Serve immediately with extra sour cream and salsa on the side.
