Preparation

    Soak the Beans

    Rinse the dried pinto beans under cold water to remove any dirt or debris. Place them in a large bowl and cover with water. Let them soak overnight or for at least 6-8 hours.

    Chop Vegetables

    Finely chop the onion, garlic, and green bell pepper. Set aside.

Cooking

    Cook the Beans

    In a large pot, drain the soaked beans and add 8 cups of fresh water. Bring to a boil over high heat, then reduce to a simmer. Cover and cook for about 1.5 hours, or until the beans are tender.

    Sauté Vegetables

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, garlic, and green bell pepper. Sauté for about 5-7 minutes until the vegetables are soft and fragrant.

    Combine Ingredients

    Once the beans are cooked, add the sautéed vegetables to the pot with the beans. Stir in the cumin, chili powder, salt, and black pepper. Let it simmer for an additional 15-20 minutes to blend the flavors.
