Taco Pancake Base
Scrambled Eggs & Bacon Filling
Frosting Cream Cheese & Berries Filling
Nutella, Banana & Caramel Sauce Filling
Method
Prepare the Pancake Base

Mix Dry Ingredients
In a bowl, whisk together flour, baking powder, sugar, and salt.

Combine and Mix
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Cook the Pancakes

Heat the Pan
Heat a non-stick skillet over medium heat and lightly grease with cooking spray or butter.

Cook Pancakes
Pour 1/4 cup of batter into the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown, about 2-3 more minutes.

Repeat
Repeat with remaining batter. You should get about 6 pancakes.
Prepare the Fillings

Cream Cheese Frosting
In a bowl, mix softened cream cheese and powdered sugar until smooth.
Assemble the Taco Pancakes

Fill the Pancakes
Take a pancake and add scrambled eggs and bacon to one side. Fold to form a taco. Repeat with cream cheese mixture and berries in another pancake, and Nutella, banana, and caramel in another.

Serve
Serve the taco pancakes warm, drizzled with additional caramel sauce if desired.
