Prepare the broth
In a saucepan, heat the chicken broth over low heat to keep it warm.

Sauté the aromatics
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

Toast the rice
Add the Arborio rice to the skillet and stir for about 2 minutes until the rice is lightly toasted.

Deglaze with wine
Pour in the white wine, stirring constantly until it is mostly absorbed by the rice.

Cook the risotto
Gradually add the warm chicken broth, one ladle at a time, stirring frequently. Wait until the liquid is almost completely absorbed before adding the next ladle. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.

Add the shrimp
In the last 5 minutes of cooking, add the tiger shrimp, salt, and black pepper. Stir until the shrimp are cooked through and pink.

Finish the risotto
Remove the skillet from heat and stir in the grated Parmesan cheese and chopped parsley. Adjust seasoning to taste.
