Method

Prepare the Ossobuco Filling

    Cook the Ossobuco

    In a large pot, heat some olive oil over medium heat. Season the ossobuco with salt and pepper, then brown it on all sides. Remove from the pot and set aside.

    Sauté Vegetables

    In the same pot, add the diced onion, carrot, and celery. Sauté until translucent. Add minced garlic and cook for another minute.

    Deglaze and Simmer

    Pour in the white wine, scraping the bottom of the pot. Add the beef broth, return the ossobuco, and let it simmer for about 1.5 hours until tender. Remove the meat, shred it and mix with chopped parsley.

Make the Ravioli Dough

    Prepare Dough

    On a clean surface, mound the flour and create a well in the center. Add the eggs and salt. Gradually mix the flour into the eggs, kneading until smooth.

    Roll Out Dough

    Wrap the dough in plastic wrap and let it rest for 30 minutes. Roll out thin sheets of dough using a pasta machine or rolling pin.

Assemble and Cook Ravioli

    Fill and Shape Ravioli

    Place small spoonfuls of ossobuco filling on one sheet of dough, leaving space in between. Cover with another sheet and press down to seal. Cut into squares.

    Cook Ravioli

    Bring a large pot of salted water to a boil. Cook the ravioli for 3-4 minutes until they float. Remove with a slotted spoon.

Prepare the Sauce

    For Pomodoro Sauce

    In a saucepan, heat olive oil and sauté minced garlic. Add crushed tomatoes and basil. Simmer for 15-20 minutes, seasoning with salt.

    For Cheese Cream Sauce

    In a saucepan, combine cream cheese, heavy cream, and garlic powder. Heat gently until smooth, then stir in grated Parmesan, seasoning with salt.

Serve

    Plate the Dish

    Serve the ravioli topped with either the Pomodoro sauce or the cheese cream sauce. Garnish with additional parsley if desired.
