    Marinate the Pork

    In a bowl, combine the pork shoulder with the pastor sauce. Cover and refrigerate for at least 2 hours or overnight for the best flavor.

    Grill the Pineapple

    Preheat a grill over medium heat. Grill the pineapple slices for about 2-3 minutes on each side until caramelized and grill marks appear. Remove from grill and set aside.

    Cook the Pork

    Preheat a skillet or grill over medium-high heat. Remove the pork from the marinade and cook for 5-7 minutes on each side, or until the internal temperature reaches 75°C (165°F). Allow the pork to rest for a few minutes before slicing.

    Assemble the Tacos

    Warm the corn tortillas on the grill for about 30 seconds on each side. To assemble each taco, place a few slices of grilled pork, a slice of grilled pineapple, chopped cilantro, and diced onion on a tortilla. Squeeze lime juice over the top.
