    Marinate the Pork

    In a bowl, combine the pork shoulder with the pastor sauce. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

    Cook the Pork

    Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade and cook until fully cooked and slightly charred, about 7-10 minutes per side. Let rest before slicing.

    Prepare the Plantains

    Peel the sweet plantains and slice them diagonally. In a skillet, heat oil over medium heat and fry the plantain slices until golden brown on both sides. Drain on paper towels.

    Assemble the Bowl

    In a serving bowl, layer the cooked rice, refried black beans, corn, diced pineapple, and sliced pork. Top with pico de gallo and fried plantains. Slice the avocado and add it on top if desired.
