Prep the Potatoes
Wash and peel the russet potatoes. Cut them into even sticks, about 1/4 inch thick.

Soak the Potatoes
Soak the potato sticks in cold water for at least 30 minutes to remove excess starch. Drain and pat them dry with a towel.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the dried potato sticks in batches to the hot oil. Fry them for about 5-7 minutes or until golden brown and crispy. Avoid overcrowding the pot.

Drain and Season
Once fried, use a slotted spoon to remove the fries and drain them on paper towels. While they are still hot, sprinkle with salt, black pepper, garlic powder, and paprika to taste.

Serve the crispy potato fries hot with your favorite dipping sauce.
