    Prepare the Rice

    In a saucepan, heat the vegetable broth and bring it to a gentle simmer. In another pot, sauté shallots and garlic in olive oil until translucent. Add Arborio rice and stir for a minute. Gradually add the broth, one ladle at a time, stirring continuously until the rice is creamy and al dente. Season with salt and pepper.

    Make the Arancini Mixture

    Once the rice is cooked, let it cool slightly. Stir in Parmesan cheese, and then form a small ball with a handful of rice, placing a cube of Gouda cheese in the center. Shape the rice around the cheese, ensuring it's fully enclosed.

    Coat the Arancini

    Dredge each rice ball in flour, then dip in beaten eggs, and finally coat with bread crumbs. Set aside.

    Fry the Arancini

    In a deep pot, heat olive oil over medium heat. Fry the arancini balls in batches until they are golden brown on all sides. Remove and drain on paper towels.

    Prepare the Sauce

    In a molcajete or blender, combine roasted tomatoes, diced bell peppers, onion, cilantro, lime juice, salt, and pepper. Blend until smooth or desired consistency.

    Serve

    Serve the hot arancini drizzled with the Molcajete Peppers Mix Sauce.
