    Prepare the Guajillo Chiles

    Remove the stems and seeds from the guajillo chiles. Soak them in hot water for about 10 minutes until softened.

    Sauté Aromatics

    In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic. Sauté until the onion is translucent.

    Blend the Chiles

    Drain the guajillo chiles and add them to a blender with 1 cup of water or bean broth. Blend until smooth.

    Combine and Cook

    Add the cooked black beans to the skillet with the sautéed onion and garlic. Pour in the blended guajillo sauce. Stir to combine and cook for about 10 minutes, allowing the flavors to meld.

    Mash the Beans

    Using a potato masher or fork, mash the beans to your desired consistency. If too thick, add more water or broth until you reach your desired texture.

    Add Cheese and Season

    Stir in the shredded gouda cheese until melted. Season with salt and black pepper to taste.
