Method

Directions

  1. 1

    Preparing the beef tenderloin

Season the beef tenderloin with salt and black pepper on all sides.

  2. 2

    Searing the beef

In a large skillet, heat vegetable oil over medium-high heat. Add the beef tenderloin pieces and sear for about 3-4 minutes on each side for medium-rare. Adjust time for desired doneness.

  3. 3

    Making the black butter sauce

Remove the beef from the skillet and let it rest. In the same skillet, reduce the heat to medium and add the unsalted butter. Allow the butter to melt and foam, then add minced garlic and thyme sprigs. Cook until the butter turns dark brown and the garlic is fragrant, about 5-7 minutes.

  4. 4

    Finishing the sauce

Remove the skillet from heat and stir in lemon juice. Strain the sauce if desired, then return to low heat to keep warm.

  5. 5

    Serving

Slice the rested beef tenderloin and serve topped with the warm black butter sauce.
