Method

For the Empanadas

  1. 1

    Prepare the Filling

In a skillet over medium heat, add olive oil and sauté the diced onion, garlic, and bell pepper until soft, about 5 minutes. Add the chopped beef tenderloin and cook until browned. Season with salt, black pepper, and cumin. Stir in chopped cilantro and remove from heat to cool.

  2. 2

    Fill the Empanadas

Take an empanada dough disc and place a spoonful of the beef mixture in the center. Fold the disc over to create a half-moon shape and seal the edges by crimping with a fork. Repeat until all filling is used.

  3. 3

    Cook the Empanadas

Heat oil in a deep pan over medium heat. Fry the empanadas in batches until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

For the Smoked Aioli Sauce

  1. 4

    Make the Aioli

In a bowl, mix together mayonnaise, smoked paprika, minced garlic, and lemon juice. Season with salt to taste. Stir until smooth and well combined.
