Method
Prepare the Fries

Cut the Potatoes
Wash and cut the potatoes into thin strips.

Season and Bake
Toss the potato strips with olive oil, salt, and paprika. Spread on a baking sheet and bake at 425°F (220°C) for 25-30 minutes until crispy, flipping halfway through.
Prepare the Burger Patty

Form the Patty
In a bowl, mix the picanha beef with salt and black pepper. Form into 4 equal patties.

Cook the Bacon

Fry the Bacon
In a skillet, cook the bacon slices until crispy. Drain on paper towels.
Assemble the Burger

Layer the Ingredients
On each burger bun, spread a layer of smoked aioli, place the cooked patty, top with cheddar cheese, crispy bacon, and guacamole.

Serve the assembled burgers with a side of house-made fries.
