    Prepare the Pork

    In a large pot, heat olive oil over medium-high heat. Season the pork ribs with garlic powder, cumin, salt, and black pepper. Sear the ribs on all sides until browned.

    Cook the Pork

    Add enough water to cover the pork ribs and bring to a boil. Reduce heat and let simmer for about 1.5 to 2 hours, or until the meat is tender and falling off the bone.

    Cook the Rice

    While the pork is cooking, prepare the rice according to package instructions.

    Fry the Plantains

    Peel and slice the sweet plantains. In a skillet, heat a bit of olive oil over medium heat and fry the plantain slices until golden brown on both sides. Remove and drain on paper towels.

    Assemble the Bowl

    Once the pork is done, shred the meat and start assembling your bowl. Layer rice, refried black beans, corn, shredded pork, pico de gallo, and fried plantains.

    Add Avocado

    Top with fresh avocado slices and drizzle lime juice over the bowl. Serve immediately.
