    Prepare the Branzino

    Preheat the oven to 400°F (200°C). Rinse the Branzino under cold water and pat dry with paper towels. Rub the fish with olive oil, salt, and black pepper. Place lemon slices and fresh thyme inside the cavity of each fish.

    Roast the Branzino

    Place the prepared Branzino on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes, or until the fish flakes easily with a fork.

    Make the Beurre Blanc

    In a saucepan, melt a tablespoon of butter over medium heat. Add minced shallots and sauté until soft. Pour in the white wine and tequila, and let it reduce by half.

    Add Cream and Finish Sauce

    Reduce the heat and stir in the heavy cream. Cook for a few minutes until it thickens slightly. Gradually whisk in the cold cubed butter, a few pieces at a time, until the sauce is smooth and emulsified. Season with salt and pepper to taste.

    Serve

    Remove the Branzino from the oven and plate it. Drizzle the tequila beurre blanc over the fish and garnish with chopped fresh parsley. Serve immediately.
