    Prepare the Ingredients

    Wash the sweet potato leaves thoroughly and set aside. Chop the onion, mince the garlic, and grate the ginger.

    Cook the Protein

    In a large pot, heat the oil over medium heat. Add the chicken (or tilapia/beef) and cook until browned. Remove from the pot and set aside.

    Sauté Aromatics

    In the same pot, add the chopped onion, minced garlic, and grated ginger. Sauté until the onion becomes translucent.

    Add Tomatoes

    Stir in the diced tomatoes and cook for about 5 minutes until they soften.

    Combine Ingredients

    Return the cooked protein to the pot, and add the vegetable broth, sweet potato leaves, red pepper flakes, salt, and black pepper.

    Simmer

    Bring the mixture to a boil, then reduce heat and let it simmer for about 15-20 minutes until the sweet potato leaves are tender and the flavors meld.
