Cooking Instructions

  1. 1

    Prepare the Lamb

In a large pot, add the lamb pieces and season with salt and one seasoning cube. Add about 2 cups of water and bring to a boil. Reduce heat and let simmer until the lamb is tender, about 1 hour. Check occasionally and add more water if necessary.

  2. 2

    Make the Soup Base

Once the lamb is tender, remove it from the pot and set aside. In the same pot, add palm oil and chopped onions. Sauté until the onions are translucent. Add the chopped bell pepper and scotch bonnet peppers, and sauté for another 5 minutes.

  3. 3

    Combine Ingredients

Stir in the ground ogbono seeds and mix well, ensuring there are no lumps. Gradually add the remaining 2 cups of water to achieve your desired consistency. Bring the mixture to a simmer.

  4. 4

    Add the Lamb

Return the cooked lamb to the pot. Add the remaining seasoning cubes and salt to taste. Stir well and let it simmer for another 10-15 minutes, allowing the flavors to meld.

  5. 5

    Serve

Serve the egusi with lamb hot, alongside your favorite side dishes such as rice or fufu.
