    Marinate the Meat

    In a large bowl, combine the cubed beef or lamb with the sliced onions, minced garlic, minced ginger, lemon juice, salt, black pepper, paprika, cayenne pepper, thyme, and vegetable oil. Mix well to ensure the meat is evenly coated in the marinade. Cover and refrigerate for at least 4 hours, preferably overnight.

    Prepare the Cooking Area

    Prepare a large grill or oven for cooking. If using a grill, ensure it has enough space for the large pan. If using an oven, preheat to 180°C (350°F).

    Cook the Meat

    Remove the marinated meat from the refrigerator and let it sit at room temperature for about 30 minutes. Place the meat in a large pan, add the bay leaves, and pour in the water. Cover the pan with aluminum foil or a lid and cook on the grill or in the oven for 2-3 hours, or until the meat is tender.

    Once cooked, remove the pan from the heat. Allow it to rest for about 15 minutes before serving. Serve the beef or lamb dibi with your choice of sides, such as rice or vegetables.
