    Prepare the Base

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.

    Add the Tomatoes

    Stir in the blended tomatoes and red bell pepper. Cook for about 10-15 minutes, stirring occasionally until the mixture reduces and the oil begins to separate.

    Season the Mixture

    Add the minced garlic, minced ginger, bay leaves, thyme, salt, and black pepper. Mix well and allow to cook for another 5 minutes.

    Add Rice and Broth

    Add the washed rice to the pot, stirring to combine with the sauce. Pour in the vegetable broth or water and bring to a boil.

    Simmer the Rice

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the rice is cooked and the liquid has absorbed.

    Fluff and Serve

    Once the rice is cooked, remove from heat, fluff with a fork, and serve hot. Enjoy your Jollof rice!
