    Prepare the Ingredients

    Gather all the ingredients and chop the vegetables as needed.

    Sauté the Aromatics

    In a large pot, heat vegetable oil over medium heat. Add chopped onions, minced garlic, and grated ginger. Sauté until the onions are translucent.

    Add Vegetables

    Stir in the chopped tomatoes and bell pepper. Cook for about 5 minutes until softened.

    Add Liquid and Seasoning

    Pour in the fish stock (or water) and bring the mixture to a boil. Add salt, black pepper, and chili powder.

    Cook the Fish

    Gently add the tilapia fillets to the pot. Reduce heat to low and simmer for about 10-15 minutes or until the fish is cooked through.

    Add Greens and Finish

    Stir in the spinach or other leafy greens and cook for an additional 5 minutes. Remove from heat and add lemon juice.

    Serve

    Serve the Pklala hot, garnished with fresh herbs if desired.
