    Prepare the Goat

    In a large pot, heat the palm oil over medium heat until hot. Add the chopped onions and sauté until translucent.

    Add Garlic and Ginger

    Stir in the minced garlic and ginger, cooking for an additional 2 minutes until fragrant.

    Cook the Goat

    Add the goat meat to the pot and brown it on all sides, about 5-7 minutes.

    Add Water and Seasoning

    Pour in the water and season with cooking salt and the chopped scotch bonnet pepper. Bring to a boil.

    Simmer

    Reduce heat to low, cover the pot, and let it simmer for about 1 hour or until the goat is tender.

    Add Dried Okra

    In the last 15 minutes of cooking, add the dried okra to the pot and stir well.

    Serve

    Serve hot with fufu on the side for dipping.
