Cooking Instructions

  1. 1

    Prepare the Base

In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent. Stir in the minced garlic and ginger, cooking for another minute.

  2. 2

    Add Tomatoes

Pour in the blended tomatoes and tomato paste. Cook this mixture for about 10-15 minutes, stirring occasionally, until it reduces and the oil starts to separate.

  3. 3

    Season the Mixture

Add the chopped bell peppers, thyme, curry powder, bay leaves, salt, and black pepper to the tomato mixture. Stir well to combine.

  4. 4

    Add Rice and Broth

Add the rice into the pot, stirring well to coat it with the tomato mixture. Pour in the chicken or vegetable broth, ensuring the rice is fully submerged.

  5. 5

    Cook the Rice

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 30-40 minutes, or until the rice is cooked and has absorbed all the liquid.

  6. 6

    Final Touches

Once cooked, fluff the rice with a fork, allowing it to sit covered for an additional 10 minutes. Adjust seasoning if necessary before serving.
