Cooking Instructions
- 1
Marinate the Lamb
In a large bowl, combine the minced garlic, chopped onion, ground cumin, ground coriander, paprika, olive oil, lemon juice, salt, and black pepper. Mix well to create a marinade. Add the lamb shoulder to the bowl, ensuring it is well coated in the marinade. Cover and refrigerate for at least 4 hours, or overnight for best results.
- 2
Preheat the Grill
Preheat your grill to medium-high heat.
- 3
Grill the Lamb
Remove the lamb from the marinade and let any excess marinade drip off. Place the lamb shoulder on the grill and cook for about 15-20 minutes per side, or until it reaches your desired level of doneness. Use a meat thermometer to check for an internal temperature of at least 145°F (63°C) for medium-rare.
- 4
Rest and Serve
Once cooked, remove the lamb from the grill and let it rest for 10 minutes. Slice the lamb and serve it hot, garnished with chopped fresh parsley.
