    In a large pot, add the goat meat, chopped onions, salt, and enough water to cover the meat. Cook on medium heat until the meat is tender, about 1-1.5 hours.

    In a bowl, mix the ground egusi with a little water to form a thick paste. Set aside.

    Combine Ingredients

    Once the goat meat is tender, add the palm oil, ground crayfish, and stock cubes to the pot. Stir well to combine.

    Cook the Egusi

    Gently fold in the egusi paste into the pot, ensuring it is well distributed. Allow to cook for about 10-15 minutes, stirring occasionally.

    Add Vegetable Leaves

    Finally, add the vegetable leaves and ground chili pepper (if using). Stir well and let it simmer for an additional 5 minutes.
